I would like to welcome you all to my website, and hope that some of what I put on these pages will help and inspire you and make

healthy eating a new way of life.

Some of you may notice that I've changed the name of this website to 'Accept-Adapt-An Edible Journey', as this is about me and my journey,

but also about yours, if you so wish.

My Acceptance of my autoimmune illness, my limitations, my Adaption to it and how to deal with it, and the Edible Journey I'm on to make this a success.

How many of us say that every January? And often into February!

I'm no exception!

The winter months can be very demoralising for anyone wanting to eat healthily, especially after the festivities of Christmas and New Year. And the ongoing bitter cold weather.

But it is possible! 

Some small changes can make a huge difference - for example, homemade soups for lunch instead of sandwiches, crisps and biscuits, can be very satisfying and filling, not to say warming! The beauty of soups are that they can be filled with healthy vegetables and protein, and can be made in advance and frozen in portion sized Soup 'n Sauce freezer bags, or your own freezer-friendly containers.

I've found that even within busy lifestyles there is always time for a 'Cooking Day' when such things can be made in advance to make life easier, and healthier, when time doesn't permit you to cook from scratch and you are tempted to reach for something unhealthy.

This year I will be concentrating on finding easy, healthy alternatives to share with you, and will be compiling a page especially for soup recipes....and much more!
